What are some Canadian publishing companies that tend to deal with new authors?

I've been working on some non-fiction literature that can potentially develop into a book. I live in Toronto and was wondering if there are certain publishers (Toronto area preferably, but not limited to) that take more kindly to new authors compared to big houses.What are some Canadian publishing companies that tend to deal with new authors?
The best approach to the world of legit publishing is to query agents first. Look at books similar to yours and see if you can find out who represents the author. An agent will know which editors at which houses might be interested in your work. There's more to it than just the company.
