And finally, which would be best to do a co-op work term at? And why?(As of today I am unsure what kind of job I would apply for - either editing, marketing or public relations)

Every single genre imaginable through various subsidiaries
They're well know for being huge and great

I feel as if I'm repeating myself. Basically, there are tons of publishing houses. If you're looking for a specific genre publisher, check through a local bookstore. Say you want to work at a Sci-fi/Fantasy publishing house, look through that section (TOR, by the way, is one of the biggest for that). As for the co-op term, I honestly have no idea. If it were me, I'd look at the main office and judge it by that.What are the most successful book publishing companies?
UHH I HAVE NO IDEA...
Scholastic? They are huge across Canada...and they let out book orders where kids can order books from them...But I'm not sure exactly what they are.
